Escarole Pizza with White Beans and Caramelized Onions

  1. For fresh dough, preheat the oven to 425 degrees F.
  2. Dust your work surface with flour and roll out and shape the dough if using fresh dough; otherwise, plan to cook the pre-packaged crust according to the package directions.
  3. In a food processor, add the beans, 2 1/2 tablespoons of olive oil, garlic, and salt and pepper.
  4. Puree until smooth, and set aside.
  5. Add the dough to a baking sheet and bake for about 6 minutes (or for several minutes less than what the directions indicate).
  6. Remove the dough from the oven.
  7. Carefully spread the white bean puree over the pizza crust.
  8. Next add the marinara sauce.
  9. Sprinkle most of the Parmesan cheese over the tomato sauce, then add the caramelized onions.
  10. Top with the torn pieces of escarole.
  11. Drizzle the remaining 1/2 tablespoon of olive oil over the escarole, then the remaining cheese.
  12. Bake for about 4 minutes, or until the crust is golden.
  13. Keep an eye on the pizza as it finishes baking so it doesnt overcook.
