Olive and Sun-dried Tomato Relish

  1. Pour tomatoes and their packing oil in food procesor.
  2. Add olives and garlic, and pulse on/off until mixture is consistency of relish, with olives and tomatoes in uniform small bits.
  3. (Dont overprocess, or it will turn muddy.)
  4. Transfer relish to bowl, and stir in lemon juice and 1/2 cup oil.
  5. Loosely spoon mixture into 3 half-pint jars.
  6. When almost full, slowly pour in enough additional oil to cover relish.
  7. Add any remaining relish, tamping the mixture down with fork.
  8. Add enough additional oil to cover relish slightly.
  9. Cover, and store in a cool spot until youre ready to give your gift.
  10. This will keep at least 3 weeks in the refrigerator.
