Mock-Up Shepherd's Pie
- 1 large sweet potato (1 lb./450 g), cut into chunks
- 1 Yukon gold potato (1/2 lb./225 g), cut into chunks
- 2 cups small cauliflower florets Safeway 1 lb For $1.99 thru 02/09
- 1-1/2 lb. (675 g) extra-lean ground beef
- 2 onions, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 lb. (450 g) fresh asparagus spears, trimmed, cooked
- 3/4 cup Cheez Whiz Cheese Spread
- 1/4 cup milk
- 1 Tbsp. butter
- Heat oven to 375 degrees F.
- Cook potatoes and cauliflower in boiling water in large saucepan 15 min.
- or until potatoes are very tender.
- Meanwhile, brown meat with onions in large skillet on medium-high heat; drain.
- Spread onto bottom of 13x9-inch baking dish; top with asparagus.
- Microwave Cheez Whiz in large microwaveable cup on MEDIUM 1 to 1-1/2 min.
- or until heated through, stirring after 1 min.
- Drizzle over asparagus.
- Drain potato mixture; return to pan.
- Add milk and butter.
- Mash until vegetable mixture is desired consistency; spread over asparagus.
- Bake 20 min.
- or until heated through.
