pineapple salsa
- 1 cup large diced pineapple
- 1/2 cup diced red bell pepper
- 1/2 cup diced red onion
- 1 diced serrano chile
- 1 bunch small bunch chopped cilantro
- 1/4 tsp cumin
- 1 juice of 1 lime
- 1 salt and pepper to taste
- Mix all ingredients.
- Refrigerate at least 30 minutes.
- Longer is better, the flavors will combine better.
- You can swap the pineapple for mango it is equally delicious.
- Also, omit or reduce the serrano to your liking.
- I use this to top grilled fish.
- It would also go great on chicken or steak
