Pork Roast with Sauerkraut

  1. Preheat the oven to 375F.
  2. Spread the sauerkraut and its liquid in the bottom of a 10 x 12 x 3-inch roasting pan.
  3. Push the pork roast down into the sauerkraut and sprinkle with the brown sugar.
  4. Cover the pan and bake for 1 hour and 30 minutes, or until the roast registers 170F on a meat thermometer.
  5. Remove the meat to a platter and spoon the drained sauerkraut around the roast.
  6. Betty loves to cook but doesnt like to eat alone.
