Goulash
- 1/3 c. flour
- 1 Tbsp. salt
- 3 Tbsp. paprika
- 2 tsp. dry mustard
- 4 lb. hamburger meat
- 1/3 c. oil
- 6 stalks celery, cut in 1/2
- 1 c. water
- 1/3 c. vinegar
- 3 bay leaves
- 20 peppercorns
- 2 tsp. caraway seed
- 3 medium onions, cut in 1/2
- 4 large carrots, cut in 1/2
- Combine flour, salt, paprika, and mustard.
- Roll meat in flour mixture.
- Brown meat slowly in hot oil.
- Sprinkle remaining flour mixture over meat.
- Add remaining ingredients.
- Cover and simmer for 1 1/2 to 2 hours.
- Then remove vegetables and bay leaf. Pack meat into jars, leaving 1/2 inch headspace.
- Cover with sauce, 1 pint 1 hour, 1 quart 1 hour and 15 minutes at 10 pounds pressure.
