Breakfast Quiche
- 1/2 stick butter
- 1 onion, sliced
- 5 slice bacon, cut up
- 1 box white mushroom, sliced
- 4 eggs
- 1/2 cup heavy cream
- 1 cup shredded monterey jack cheese
- 1 Fresh parsley
- 1 pie crust 9-inch, homemade or store bought
- Fry bacon in skillet until crisp.
- Set aside.
- Melt butter in the same skillet.
- Add onions and cook for a few minutes, then add mushrooms and cook until soft.
- Salt mixture to taste.
- Set aside to cool.
- In a large bowl, beat eggs with cream.
- Add grated cheese, salt and pepper.
- Add mushroom mixture into egg/cream mixture.
- Stir together.
- Add bacon and stir.
- Add parsley, mix.
- Bake for 35 minutes, then remove foil and bake for another 15 minutes.
- Remove from oven and allow to set for ten minutes before serving.
