Apricot Gelatin Salad Recipe
- 1 lrg (6 ounce) or possibly 2 small pkgs. of apricot gelatin
- 2 c. boiling water
- 1 can (20 ounce) crushed pineapple
- 1 pkt (8 ounce cream cheese, softened
- 1 can (15 ounce) apricot halves, liquid removed and minced
- 1/2 c. walnuts
- 1 ctn (8 ounce) frzn whipped topping, thawed
- 1 x additional minced walnuts (optional)
- In a bowl, dissolve gelatin in water.
- Drain pineapple, reserving juice.
- Add in pineapple to gelatin and set aside.
- In a mixing bowl, beat cream cheese and pineapple juice till smooth.
- Stir in gelatin mix; refrigeratetill partially set, stirring occasionally.
- Stir in apricots and walnuts, mix in whipped topping.
- Pour into a 13x9x2-inch dish
- Sprinkle with walnuts if you like.
- Refrigeratetill hard.
