Apricot Pastries

  1. Place all ingredients minus the apricot preserves in a large bowl.
  2. Blend well with pastry blender.
  3. Divide dough into two balls and refrigerate for 1 hour.
  4. Take one ball of done out at a time and roll 1/8" thick.
  5. Cut circles with round cookie cutter.
  6. Center one scant teaspoon of preserves into center of circle.
  7. Brush half of the edge of circle with beaten egg.
  8. fold over and crimp edges with fork.
  9. Brush top with egg.
  10. Sprinkle with sugar.
  11. place on lightly greased cookie sheet and put in 400 degree oven for 10-12 minutes.
