German-Style Green Beans
- 1 lb. fresh green beans, trimmed
- 4 oz. country bacon, sliced
- 3 to 4 shallots, minced (depending on size)
- Red wine vinegar
- Bacon drippings (if needed)
- Brown sugar twin
- brown sugar
- Salt and pepper (to taste)
- Steam beans until tender (about 16-18 minutes in my steamer) or cook by another method.
- Fry bacon until crisp and set aside; cut or crumble into small pieces.
- Cook minced shallot if bacon drippings (adding more if needed) until tender and lightly browned.
- Add several tablespoons of vinegar to pan, and sweeten to taste with brown sugar or twin (should have a pleasant sweet-sour balance).
- Add cooked beans to pan along with crisp bacon, and season to taste with salt and pepper.
- Simmer over low heat, stirring often, until sauce dissipates.
- Serve hot.
