Kale and grain salad
- 1/2 cup black rice
- 1/2 cup quinoa
- 1/2 cup lentils
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 head kale, torn into bite sized pieces
- 1/2 cup cherry tomatoes, sliced and deseeded
- 1 cucumber, diced
- 1 red onion, diced
- 4 oz goat cheese, crumbled
- 1/3 cup chia seeds
- 1 balsamic vinaigrette
- Cook rice, lentils, and quinoa according to package directions.
- Rinse in cold water and press the excess water from it.
- Season with salt and pepper and chill 2 hours.
- Toss vegetables.
- For each serving, place vegetables on a plate, 1/4 cup grain mixture, a tablespoon of goat cheese, and a tablespoon of chia seeds.
- Drizzle with dressing.
