Sweet and Sour Tofu

  1. Trim the shiitakes and set aside.
  2. Press the tofu for 30 minutes and cube.
  3. Quarter the cucumbers lengthwise & cut into 1 1/2 inch lengths.
  4. Chop the bell pepper.
  5. Heat oil in a wok over medium-high heat.
  6. Add the tofu and carefully stir fry until the colour changes.
  7. Remove the tofu and add the garlic.
  8. Stir fry until the colour changes.
  9. Add all the vegetables to the wok & stir fry for 2 minutes.
  10. Add all the seasonings and continue to stir fry for 3 to 5 minutes.
  11. Serve garnished with green onions.
