Spicy Garlic Shrimp & Broccoli over Soba Noodles
- 2 Tablespoons Olive Oil
- 4 cloves Garlic, Minced
- 2 cups Broccoli Florets
- 2 teaspoons Low Sodium Soy Sauce
- 1 teaspoon Sriracha
- 1- 1/2 pound Shrimp, Peeled And Deveined
- 5 ounces, weight Soba Buckwheat Noodles, Cooked According To Package Directions
- 3 whole Scallions, Sliced
- Sesame Seeds, For Garnish
- 3 Tablespoons Sriracha
- 1/4 cups Low Sodium Soy Sauce
- 1 Tablespoon Rice Wine
- 1 Tablespoon Sesame Oil
- 1 teaspoon Sugar
- In a small bowl, whisk together the sauce ingredients.
- In a large nonstick pan, heat olive oil over medium high heat.
- Once oil is heated, add garlic and broccoli.
- Cook for less than a minute, drizzle soy sauce and Sriracha over broccoli and stir around.
- Continue cooking, stirring regularly, for about 7 to 8 more minutes, until broccoli is tender.
- Add shrimp to hot pan, cooking for about 2-3 minutes on each side.
- Cook until shrimp turns opaque and is just cooked through.
- Reduce heat in pan to medium low and add in the sauce mixture.
- Mix until broccoli and shrimp are well coated.
- Then add cooked soba noodles to the pan and stir until they are also well coated.
- Serve, garnishing with scallions and sesame seeds.
- Also, feel free to garnish with more Sriracha if you want to turn up the spice!
