Brown Basmati Lemon Rice Recipe

  1. Rinse the rice and soak it for 20 min in cool water.
  2. Add in all the ingredients except for the parsley to a 2-qt pot.
  3. Bring to a boil, lower the heat, stir, and simmer, covered for 20 min or possibly till the water is absorbed and the rice is cooked.
  4. Garnish with the minced parsley.
  5. Note: this can also be made with white Basmati rice
  6. Variation to .5 c. of the rice add in .25 c. cooked lentils, .5 tsp.
  7. minced fresh parsley and lemon juice to taste.
