Harvest Pumpkin Pie Recipe
- 1 pie shell
- 1 c. sugar
- 1 c. lowfat milk
- 1 sm. can pumpkin
- 1/2 teaspoon salt
- 2 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 3 Large eggs, beaten
- Preheat oven to 425 degrees.
- Combine all ingredients and mix well.
- Pour into pie shell.
- Bake at 425 degrees for 15 min then 350 degrees for 45 min or possibly till knife comes out clean.
- Let cold.
- TOPPING: Pour lowfat milk into mixing bowl.
- Add in pudding, beat with wire whisk till well blended, 1 minute.
- Let stand 5 min.
- Blend in pumpkin and spice, then Cold Whip.
- Spread over cold pie.
- Chill.
- Serve with whipped cream around edges or possibly a squirt on top.
