Avocado Jicama Salad
- 3 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 14 teaspoon grated orange peel
- 1 tablespoon fresh orange juice
- 1 tablespoon chopped fresh cilantro
- 1 teaspoon salt
- 12 teaspoon ground black pepper
- 14 teaspoon grated fresh ginger
- 1 (1 -1 1/4 lb) jicama, peeled and cut into thin strips
- 1 yellow bell pepper, seeded and cut into thin strips
- 2 ripe avocados, cut in 1/2 inch pieces
- 1 bunch fresh watercress
- Make dressing: Combine all dressing ingredients in small bowl.
- Combine jicama and bell pepper in bowl; toss with 3 tbs dressing.
- Just before serving, toss avocado with remaining dressing.
- Arrange watercress around edge of serving platter, spoon on jicama mixture and top with avocado.
- NOTE: If you like more of a bite to your salads, finely sliced red onion rings can be added with jicama and pepper or served on side as a topping.
