Edward Vii Sole
- 4 sole fillets (about 1 1/2 lbs)
- salt & freshly ground black pepper
- 12 lb unsalted butter, softened
- 3 ounces salted almonds, chopped
- 14 lb fresh mushrooms, chopped
- 1 tablespoon fresh parsley, chopped
- 1 lemon
- 14 teaspoon nutmeg, freshly ground
- 12 cup dry white wine
- Butter a baking dish large enough to hold the fillets in a single layer; preheat oven to 375 degrees F.
- In a bowl, combine butter, almonds, mushrooms, parsley, the juice of the lemon, salt and pepper, and nutmeg; spread over fillets.
- Add wine to dish.
- Place in oven until fish flakes easily, about 20 minutes.
- Serve in baking dish.
