Kiwi Mojito
- 1/2 cup peeled and coarsely chopped kiwi
- 3 mint leaves
- 1/2 ounce Mint Syrup
- Ice
- 2 ounces light rum
- 1/2 ounce fresh lime juice
- 1 lime wheel
- In a mini food processor, puree the kiwi until smooth, then refrigerate until needed.
- In a cocktail shaker, muddle the mint leaves with the Mint Syrup.
- Fill the shaker with ice, then add the rum, lime juice and kiwi puree.
- Shake vigorously and strain into an ice-filled highball glass.
- Garnish with the lime wheel.
