Mini BBQ Chicken Sopes

  1. Cook first 3 ingredients in saucepan on medium-low heat 5 min.
  2. or until heated through, stirring occasionally.
  3. Remove from heat; stir in lime juice.
  4. Cover to keep warm.
  5. Mix masa harina and water until mixture forms soft dough.
  6. Knead 3 min.
  7. Shape into 16 balls, using about 1 Tbsp.
  8. dough for each.
  9. Flatten each to 2-1/2-inch round.
  10. Heat large skillet or comal on medium-high heat.
  11. Add dough rounds, in batches, to skillet; cook 1-1/2 min.
  12. or until lightly browned on both sides, turning every 30 sec.
  13. Cool slightly.
  14. Press dough to make 1/4-inch-high rim around edge of each round.
  15. Brush both sides of each with oil.
  16. Cook in same skillet 1 min.
  17. on each side.
  18. Serve topped with chicken mixture and remaining ingredients.
