Raspberry cocoa nut squares
- 1 3/4 cup flour lightly spooned into cup
- 1 1/2 cup sugar
- 1/4 tsp salt
- 1/2 cup butter or oleo
- 4 eggs
- 2 1/2 cup raspberry jam
- 1/4 cup butter softened
- 3 can 4 ounce cocoanut
- put 1/2 cup sugar , flour and salt in bowl and blend well
- cut in butter till very fine
- add 1 lightly beaten egg to crumb mixture
- and toss to mix
- gather mixture together and work quickly with hands until crumbs form a dough with lightly floured fingers
- press evenly on bottom of greased baking dish 15 by 10 by 1 spread thin but even
- coat with jam on top
- cream butter and remaining sugar
- add remaining eggs 1 at a time beating after each egg
- do this till light and creamy
- add cocoa nut and mix well
- pour over top of jam and spread evenly
- bake at 350F 20 to 25 minutes
- let cool and cut to serve
