Velveeta Fudge

  1. Put velveeta, butter, unsweetened baking chocolate and corn syrup in a large microwavable bowl.
  2. Microwave on high for 2 minutes; stir.
  3. Microwave an additional minute; stir until well blended.
  4. Add chocolate mixture in batches to sugar, beating with an electric mixer on medium speed until well blended after each addition.
  5. Stir in pecans and vanilla.
  6. Spread into a greased 13 x 9 x 2 inch pan.
  7. Smooth top.
  8. Cover and refrigerate several hours until firm.
  9. Cut into 1 inch square pieces.
