Confetti Couscous

  1. Bring broth, rind, juice, and salt to a boil in a medium saucepan.
  2. Stir in couscous.
  3. Cover; remove from heat.
  4. Let stand 5 minutes.
  5. Fluff with a fork.
  6. Mix couscous, pimiento, peas, and almonds in large serving bowl.
