Healthy Apricot Cookies
- 1 cup all-purpose flour
- 14 cup cake flour
- 2 tablespoons cake flour
- 34 cup whole wheat flour
- 12 teaspoon baking soda
- 34 teaspoon baking powder
- 12 teaspoon salt
- 12 cup butter flavor shortening, room temp
- 12 cup brown sugar
- 12 cup honey
- 1 egg
- 1 egg yolk
- 1 cup dried apricot, chopped
- 12 cup sunflower seeds
- Preheat oven to 300.
- Cream shortening and brown sugar.
- Mix in eggs.
- Add vanilla and honey.
- Mix flours, baking soda, baking powder, and salt.
- Fold into wet ingredients until just mixed.
- Add apricots and sunflower seeds.
- With wet hands roll about a tablespoon of cookie dough into a ball.
- Bake cookies for 20 minutes til edges are a little brown.
