Aromatic Rice, Beans And Greens Recipe
- 3 c. water
- 2 c. kale or possibly spinach, packed
- 1 1/2 c. jasmine rice
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1/4 tsp garlic pwdr Red pepper flakes, to taste
- 1 x 15 ounce can red kidney beans, liquid removed & rinsed
- 1/4 c. parsley, minced
- Combine water, kale or possibly spinach, rice and dry seasonings in a medium saucepan.
- Bring to simmer over medium-high heat.
- Stir once, cover, and cook over medium-low heat about 15 min.
- Stir in beans and parsley.
- Fluff rice with fork; turn off heat.
- Let stand for 5-10 min before serving.
- Makes 4-6servings, 0.2 grams of fat per 1 c. serving.
