Janeen's Jarlsberg Squares
- 1 tablespoon butter
- 12 cup chopped mushroom
- 4 eggs, lightly beaten
- 4 cups shredded jarlsberg cheese (1 1/2 lbs)
- 14 cup snipped chives
- 12 teaspoon white pepper
- 12 teaspoon grated nutmeg
- 1 teaspoon chopped fresh tarragon (or 1/2 tsp dried)
- Preheat oven to 350.
- Grease and flour an 8" square cake pan to make thick squares - OR - a 13" x 9" cake pan to make thin squares.
- Melt butter in a saute pan over medium-high heat.
- Add mushrooms and saute until all the liquid evaporates.
- Remove from heat.
- Set aside to cool.
- In a large bowl, combine eggs, cheese and chives.
- Stir in the cooled mushrooms, Add the white pepper, nutmeg and tarragon.
- Mix well.
- taste and correct the seasonings.
- Spread mixture evenly in prepared pan.
- Bake until knife inserted in the centre comes out clean, about 25 minutes.
- Let cool in the pan on a rack for 5-7 minutes before cutting into squares to serve.
