Allen Susser's Red Bean And Dried Fruit Cholent Recipe
- 3 c. dry red beans
- 1 c. diced sweet onions
- 3 Tbsp. vegetable oil
- 1/2 c. diced carrots
- 1 Tbsp. chopped fresh thyme
- 2 x bay leaves
- 18 lrg dry figs quartered
- 1/2 c. sun-dry cherries
- 1 Tbsp. kosher (coarse) salt
- 1 tsp coarsely grnd black pepper
- Wash beans under cool running water, then let them soak for 1 hour in sufficient water to cover them completely.
- Drain.
- Saute/fry onions in oil for 15 min.
- Add in liquid removed beans, carrots, thyme, and bay leaves, along with sufficient water to cover the beans by 3 inches.
- Bring to a boil over low heat, then simmer for 1 hour.
- Add in figs and cherries.
- Simmer 45 min longer.
- Season with salt and pepper.
- Remove bay leaves.
- MAKES 6 TO 8 servings

- NOTES : Can add in potatoes, use fewer beans.
