Allen Susser's Red Bean And Dried Fruit Cholent Recipe

  1. Wash beans under cool running water, then let them soak for 1 hour in sufficient water to cover them completely.
  2. Drain.
  3. Saute/fry onions in oil for 15 min.
  4. Add in liquid removed beans, carrots, thyme, and bay leaves, along with sufficient water to cover the beans by 3 inches.
  5. Bring to a boil over low heat, then simmer for 1 hour.
  6. Add in figs and cherries.
  7. Simmer 45 min longer.
  8. Season with salt and pepper.
  9. Remove bay leaves.
  10. MAKES 6 TO 8 servings
  11. Cuisine: "Jewish"
  12. NOTES : Can add in potatoes, use fewer beans.
  13. Can experiment with this dish.
