Quick Dal
- 2 Tablespoons Olive Oil
- 1 whole Yellow Onion, Diced
- 1 teaspoon Cumin Seeds
- 1/4 teaspoons Ground Cardamom (or Curry Powder)
- 4 cloves Garlic, Minced
- 4 cups Broth
- 1 can (14.5 Oz. Size) Diced Tomatoes
- 2 cups Red Lentils
- 2 Tablespoons Fresh Ginger, Minced
- 1 whole Jalapeno, Finely Diced And Seeded
- 1 teaspoon Ground Turmeric
- 1 teaspoon Salt
- Heat the oil in a large skillet over medium heat.
- Saute onion in oil until translucent.
- Add cumin seeds, cardamom or curry powder and garlic.
- Stir and continue to heat for 2 minutes.
- Add broth, tomatoes, lentils, ginger, jalapeno pepper, turmeric and salt.
- Bring to a boil.
- Cover, reduce heat and simmer 15 minutes.
