Garlic and Olive Oil Pasta
- 4 tbsp. minced garlic (save 1 tsp.)
- 3 tsp. salt
- 6 tbsp. extra-virgin olive oil
- 1 lb. thin spaghetti
- 3 tsp. chopped parsley
- 1/2 lemon, juice of
- Grated Parmesan cheese
- 1 cup pasta water, held before draining pasta
- 1 tsp. salt
- Cook spaghetti as directed, but add 3 tsp.
- salt to water.
- In a heavy skillet, cook olive oil with 1 tsp.
- salt and garlic over low flame.
- This mixture will become foamy and sweeten as it cooks.
- When the noodles are cooked, drain well and mix with garlic-oil mixture.
- Add lemon juice, and water as needed.
- Add 1 tsp.
- garlic and parsely.
- Blend well and serve with grated Parmesan.
