Lemony Poppy Seed Muffins
- 13 cup milk
- 14 cup vegetable oil
- 6 ounces lemon yogurt
- 1 egg
- 1 34 cups flour
- 14 cup sugar
- 2 tablespoons poppy seeds
- 1 tablespoon grated lemon, rind of
- 2 12 teaspoons baking powder
- 12 teaspoon baking soda
- 12 teaspoon salt
- Grease bottoms of 24 miniature muffin cups.
- Beat milk, oil, yogurt and egg.
- Stir in remaining ingredients.
- Divide batter evenly among muffin cups.
- Bake at 350 degrees for 10 to 12 minutes, or until golden brown.
