Madras Chicken Skillet
- 4 small boneless skinless chicken breasts (1 lb.)
- 1 Tbsp. oil
- 1 medium onion, chopped Safeway 3 lb For $2.99 thru 02/09
- 1-1/2 cups instant white rice, uncooked
- 1 can (14 fl oz/398 mL) peach slices in light syrup, undrained
- 1/3 cup mango chutney
- 2 tsp. curry powder
- Cook chicken in hot oil in large frying pan on medium heat until chicken is cooked through, turning chicken over and adding onion to the pan after 8 minutes.
- Add rice, peaches with their juices, chutney and curry powder; mix well.
- Bring to boil; cover.
- Remove from heat.
- Let stand 5 min.
