Scampi-Style Garlic Gorgonzola Potatoes
- 1 (20 ounce) package Simply Potatoes Shredded Hash Browns
- 2 cups Italian cheese, shredded
- 5 ounces gorgonzola, crumbled
- 1 bunch green onion, diced
- 12 cup sun-dried tomato, diced
- 12 cup bacon, fried until crisp
- 12 cup corn, canned
- 1 tablespoon dried thyme, crushed
- 1 tablespoon cajun seasoning, such as Tony Chachere's
- Heat oven to 350 degrees F. Spray a 2 quart glass casserole with nonstick cooking spray.
- In a large bowl combine all hash brown ingredients and mix well.
- Let stand while you prepare scampi-style sauce.
- In small saucepan over medium low heat, combine 1/4 cup butter, 4 oz.
- goat cheese, 3 T. minced garlic, 1 cup chicken stock, 1 cup heavy cream, and lots of white pepper until well mixed and slightly bubbly.
- Pour this mixture over potato mixture and stir well.
- Spread into prepared baking dish and, if desired, top with 3/4 cup flavored bread crumbs spreading evenly.
- Bake for 50 minutes.
- Enjoy.
