This...Is Chili
- 2 tablespoons vegetable shortening
- 5 cups onions minced
- 2 tablespoons garlic minced
- 2 pounds ground beef, extra lean ground
- 2 pounds ground pork lean
- 70 ounces tomatoes, canned
- 24 ounces tomato paste
- 1 teaspoon oregano dried
- 1 teaspoon cumin ground
- 1 each bay leaves
- 3 cups pinto beans cooked
- 2 cups cheddar cheese grated
- 4 cups scallions, spring or green onions sliced
- Heat lard in a skillet, over a medium flame add the onions and garlic.
- Heat and stir for 4 to 5 minutes, until softened, without browning add the beef and pork.
- Heat and stir until all redness disappears add the tomatoes, tomato paste, oregano, cumin, bay leaf, and beans.
- Bring to a boil, reduce heat, cover and simmer for 2 hours.
