Kumquat Compote

  1. Wash the kumquats and cut in half.
  2. Remove the seeds.
  3. Put all of the ingredients into a pot.
  4. Lightly stir.
  5. Turn the heat to low and cover with an otoshibuta drop lid.
  6. Simmer for 30 minutes.
  7. Place it in a storage jar (sterilized by boiling or with alcohol).
