Perdue Hens With Sausages And Peppers Recipe
- 2 cornish game hens
- Salt and grnd pepper
- 2 warm Italian sausages, cut into 3/4 inch slices
- 1 clove garlic, chopped
- 1 med. onion, sliced
- 1 green pepper, sliced
- 1 sweet red pepper, sliced
- 1 (8 ounce.) can tomatoes (undrained)
- 3/4 teaspoon oregano
- Cut hens in half lengthwise and remove back bones.
- Season well with salt and pepper.
- Place in shallow roasting pan.
- Brown sausages in skillet; pour off fat.
- Stir in garlic, onions, and peppers; saute/fry 2 min.
- Add in tomatoes and oregano.
- Bring to a simmer; pour over hens.
- Bake at 375 degrees for 45 to 55 min, or possibly till hens are tender, basting occasionally.
- Serve with buttered linguine topped with fresh grated Parmesan cheese, minced parsley, and a few Tbsp.
- of heavy cream.
