Perdue Hens With Sausages And Peppers Recipe

  1. Cut hens in half lengthwise and remove back bones.
  2. Season well with salt and pepper.
  3. Place in shallow roasting pan.
  4. Brown sausages in skillet; pour off fat.
  5. Stir in garlic, onions, and peppers; saute/fry 2 min.
  6. Add in tomatoes and oregano.
  7. Bring to a simmer; pour over hens.
  8. Bake at 375 degrees for 45 to 55 min, or possibly till hens are tender, basting occasionally.
  9. Serve with buttered linguine topped with fresh grated Parmesan cheese, minced parsley, and a few Tbsp.
  10. of heavy cream.
