hakka noodles

  1. Wash the vegetables.
  2. String the French beans and make very fine strips.
  3. Peel the carrots and cut them into fine strips.
  4. Chop the onions.
  5. Retain 2 stems of the spring onions and finely chop them.
  6. Boil the noodles with sufficient water, some salt and 1 tbsp.
  7. of oil till the noodles are soft.
  8. Drain out the water.
  9. Pour some water (2-3 glasses) of room temperature on them, so that they do not stick together.
  10. Heat oil in a sufficiently big kadai, add the chopped onions and fry on a medium flame till they are transparent.
  11. Add the vegetables, bean sprouts, ajinomoto and salt to taste.
  12. Cook on a medium flame till the vegetables are tender but also crunchy.
  13. Add the noodles, soya sauce, vinegar and finely chopped greens.
  14. Mix well.
  15. Simmer for 5-10 minutes.
  16. Serve hot.
