Broiled Lamb Chops With Balsamic Reduction Recipe
- 2 lb rack of lamb cut into chops 3 chops per person Coarse salt to taste Freshly-grnd black pepper to taste
- 1 1/2 c. balsamic vinegar
- 3 Tbsp. brown sugar
- 3 sprg fresh rosemary finely minced
- 2 x garlic cloves crushed, and cracked away from the peels
- Preheat broiler.
- Arrange chops on broiler pan.
- In a small pot, combine vinegar, sugar, rosemary, and garlic.
- Bring to a boil and reduce heat to low.
- Simmer 10 min to thicken sauce.
- Remove garlic.
- Broil chops 5 min on each side for medium-rare.
- Season chops with salt and pepper.
- Transfer chops to hot serving platter and drizzle with balsamic rosemary reduction.
- This recipe yields 4 servings.
