Quinoa Pizza Bites
- 2- 1/4 cups Cooked Quinoa
- 3 Eggs (large Or X-large)
- 1 cup Pepperoni, Chopped Fine
- 13 cups Mushrooms, Chopped Fine
- 13 cups Black Olives, Chopped Fine
- 13 cups Red Onion, Chopped Fine
- 1 cup Shredded Mozzarella Cheese
- 2 teaspoons Minced Garlic
- 2 teaspoons (heaping) Pizza Seasoning
- 1 teaspoon Paprika
- 1/4 cups Parmesan Cheese, Grated
- 1 cup Pizza Sauce For Dipping
- Preheat oven to 350 F.
- Prepare 1 or 2 mini-muffin baking tray(s).
- Recipe makes roughly 40 bites.
- Pan can be sprayed liberally with olive oil or paper mini-muffin liners also work well.
- In a medium bowl, add all of the ingredients (except for the grated Parmesan cheese and the pizza sauce) and mix until combined.
- Spoon the mixture into the muffin pan filling each cup to the top (about 1 heaping tablespoon each).
- Press down gently to compact.
- Sprinkle with grated Parmesan.
- Bake for 15 to 20 minutes.
- Remove them from the oven.
- Cool for 10 minutes before removing from the pan.
- Serve warm with pizza sauce for dipping.
