Green Mayonnaise
- 1 cup /240 ml mayonnaise, preferably homemade
- 1 bunch watercress, trimmed and finely chopped
- 6 to 8 chives, snipped into small pieces
- Put 2 tbsp of the mayonnaise into the bowl of a food processor and add the watercress and chives.
- Pulse several times to obtain a rough puree.
- Put the remaining mayonnaise in a small bowl, then mix the watercress mixture in well.
