Peanut-Ginger Chicken
- Peanut-Ginger Dressing
- 1 pkg. GOOD SEASONS Italian Dry Mix Salad Dressing
- 1-1/2 qt. water
- 2 qt. oil
- 1-1/3 cups lime juice Safeway 3 ct For $1.00 thru 02/09
- 3/4 cup nam pla (fish sauce)
- 3 cups creamy peanut butter
- Chicken Whole Foods 1 lb For $3.99 thru 02/09
- 80 each boneless skinless chicken breasts (6 oz. each)
- Peanut-Ginger Dressing: Beat ingredients in 6-qt.
- bowl with mixer fitted with wire whip attachment on low speed 2 min.
- Chicken: Pour Peanut-Ginger Dressing over chicken in 8-gal.
- plastic container with lid (or in 2-gal.
- plastic container with lid for trial recipe).
- Refrigerate at least 4 hours or up to 24 hours to marinate.
- For each serving: Remove 1 chicken breast from marinade; cook in nonstick skillet on medium heat 2 min.
- on each side or until lightly browned on both sides.
- Place in shallow pan.
- Bake in 350 degrees F standard oven 3 to 5 min.
