Italian Style Grilled Sardines
- 8 Sardines
- 1 large Japanese leek
- 1 enough to coat everything Herb salt
- 1 tbsp White wine
- 2 tbsp Olive oil
- 1 enough to coat everything Parmesan cheese
- 1 for topping Fresh parsley
- Remove the head and innards of the sardines, and carefully wash all the bloody parts.
- Pat dry with kitchen paper.
- Cut the Japanese leek into 5 cm lengths, and then into half lengthways.
- Line them up in the baking tray (the cut side facing up).
- Line the sardines on top of the leeks.
- Sprinkle the white wine, herb salt, olive oil and Parmesan cheese on top.
- Grill for 15 minutes.
- Top them with chopped parsley and they're done!
