Fruit Pizza
- 1 (17 oz.) pkg. sugar cookie dough
- 2 c. vanilla yogurt
- 2 eggs, lightly beaten
- 1/4 c. all-purpose flour
- 1/2 tsp. grated lemon peel
- 4 c. assorted fresh fruit (plums, kiwis, strawberries, blueberries, bananas and grapes, sliced)
- 1/4 c. sugar
- 4 tsp. cornstarch
- 3/4 c. water
- 1/4 fresh lemon juice
- Preheat oven to 400u0b0.
- Slice dough about 1/8-inch thick; place in overlapping form on a 10-inch pizza pan.
- Press dough together with fingers to form crust.
- Bake for 10 minutes; remove from oven and leave oven on.
- Combine yogurt, eggs, flour and lemon peel in small bowl; mix well.
- Spread yogurt mixture onto crust.
- Return to oven; bake for 10 minutes.
- Cool completely.
- Arrange fruit in decorative pattern over filling.
- Combine sugar and cornstarch in small pan.
- Add water.
- Stir over medium heat until mixture boils and is thick; remove from heat.
- Stir in lemon juice.
- Brush glaze over fruit.
- Chill before serving.
