Penne With Sauteed Artichokes, Green Beans, and Parmesan Cheese
- 8 ounces penne pasta
- 3 tablespoons olive oil
- 2 garlic cloves, chopped
- 1 (14 ounce) can artichokes
- 12 lb green beans, cut into 1/2 inch pieces
- 12 cup white wine
- 12 cup vegetable broth
- 12 cup parmesan cheese
- salt, to taste
- pepper, to taste
- Cook pasta according to package directions.
- Cook the garlic in olive oil in a saute pan over medium heat until garlic turns slightly yellow.
- Add artichokes and green beans and saute for 3 minutes.
- Pour in white wine and continue cooking until liquid in reduced by three fourths.
- Add broth and reduce liquid by half.
- Season with salt and pepper.
- Remove from heat and stir in Parmesan.
- Toss pasta with sauce mixture and serve.
