Fruited Rice
- 13 cup chopped onion
- 1 (6 ounce) package long grain and wild rice blend
- 2 cups chicken broth
- 14 cup dried cranberries
- 14 cup chopped dried apricot
- 12 cup toasted pecans
- Spray small frying pan with nonstick cooking spray, and add chopped onions .
- Cook on medium heat for 5 minutes, or until onions begin to brown.
- Place onions,rice mix, chicken broth, dried cranberries, and dried apricots in slow cooker, include the seasonings from the rice package.
- Stir well to dissolve seasonings.
- Cover and cook on high for 2 hours.
- Just before serving sprinkle dish with the 1/2 cup toasted pecans, or other nuts.
