Vegan Cornbread
- 1 14 cups flour
- 34 cup cornmeal
- 12 cup sugar
- 2 teaspoons baking powder
- 12 teaspoon salt
- 1 cup soymilk
- 14 cup vegetable oil
- 2 tablespoons arrowroot, mixed with 1/4 cup applesauce
- 12-1 cup corn
- Combine the dry ingredients.
- Add everything else and stir just till it's all combined.
- Pour the batter into a greased pan and bake at 400 degrees for 25 minutes.
- Test by sticking a fork or toothpick into the center--it should come out mostly clean.
