Rum Balls
- 2 tablespoons dark chocolate cocoa powder
- 1 cup confectioners' sugar
- 14 cup dark rum
- 3 tablespoons corn syrup
- 2 cups chocolate cookie crumbs
- 1 cup finely chopped toasted pecans
- 1 cup chocolate sprinkles
- IN a medium sized bowl, sift the cocoa powder and the confectioners sugar together and set aside.
- In a separate bowl, stir the rum and corn syrup together and then add it to the cocoa and sugar, mixing thoroughly.
- Add the cookie crumbs and the pecans and stir until the mixture holds together well.
- Roll the dough into 1-inch balls and gently press them into the chocolate sprinkles.
- Store in an airtight container for 2 days or freeze.
