Mango Jalapeno Burritos

  1. Combine mango, pineapple, scallion, tomato, cilantro and lime juice.
  2. Season to taste with salt and pepper and refrigerate.
  3. Heat sausages on a microwave safe plate until skin splits and sizzles (1 - 2 minutes).
  4. Remove, dice and set aside.
  5. Stack tortillas on a microwave safe plate and cover with a damp paper towel.
  6. Cook on high for thirty seconds.
  7. Invert stack and repeat.
  8. For each tortilla, spoon hot sausage along center line.
  9. Add mango salsa alongside.
  10. Top with shredded cheese and lettuce.
  11. Fold up bottom and roll closed, leaving top open.
