Caribbean Black Beans

  1. In 2-qt.
  2. saucepan, heat water and beans to boiling.
  3. Boil uncovered 2 min.
  4. ; reduce heat.
  5. Cover and simmer about 45 min., stirring occasionally, until beans are tender; drain.
  6. In 10-in.
  7. skillet, heat oil over medium heat.
  8. Cook remaining ingredients except rice in oil about 5 min., stirring occasionally, until bell pepper is crisp-tender.
  9. Stir in beans.
  10. Cook about 5 min.
  11. or until hot.
  12. Serve with rice.
