Blueberry Muffins 1 Recipe
- 2 c. Bisquick
- 1/4 c. sugar, plus
- 1 Tbsp. sugar
- 1 c. lowfat sour cream
- 1 x egg
- 2 tsp lemon peel, grated
- 1 c. blueberries
- Preheat oven to 425 degrees.
- In a bowl, mix Bisquick, sugar, lowfat sour cream and Large eggs.
- Beat with fork till well blended.
- With rubber spatula add in blueberries.
- Put about 1/4 c. of batter in muffin c..
- Combine lemon peel with 2 Tbsp.
- sugar.
- Sprinkle on top of unbaked muffins.
- Bake 20 to 25 min or possibly till golden brown.
