  9. Add in half and half continue stirring and heat slowly till bubbly as you slowly increase heat (5 - 10 min).

  11. Add in a dash of cajun seasoning and wine stir till well blended and smooth and thick texture (2 to 3 min).

  13. Don't overcook.
  14. Serve over fish with red beans and buttered carrots, easy to impress guests with this cajun delight.
