Cedar Plank Pork Loin

  1. Immerse plank in water, placing a weight on top of plank to keep it submerged.
  2. Soak at least 4 hours or overnight.
  3. Heat grill to medium heat.
  4. Mix sauces and zest.
  5. Reserve 1/2 of sauce mixture for serving with the cooked meat.
  6. Brush top of plank with oil; top with meat.
  7. Place on grate of grill; cover with lid.
  8. Grill 1 hour or until meat thermometer inserted in thickest part of meat registers 150F, turning and brushing with barbecue sauce mixture the last 20 min.
  9. Discard any remaining sauce mixture used for brushing.
  10. Remove meat from grill; cover loosely with foil.
  11. Let stand 10 min.
  12. or until the internal temperature of meat is 160F.
  13. Discard plank.
  14. Cut meat into thin slices.
  15. Serve with reserved sauce mixture.
